PWL Red Deer food team puts creativity
on the line at a Chili Cook Off event

Carrie L’Herueux, a cook at Points West Living Red Deer, has been thinking about the perfect chili recipe for some time. She had a vision and wanted to see if it was a winner. So a few months ago, she started to stir the pot.

Chilil Cook Off event during Westerner Days

Carrie approached Food Services Supervisor, Paulo San Andres about entering the Big 105.5 Radio Chili Cook Off event during Red Deer’s Westerner Days in July. Paulo was up for the challenge and between the two chefs, they came up with a few variations.

Tested recipes on residents

“Carrie and Paolo planned a few different chili recipes,” says General Manager Tracy Sutherland. “They tested them on residents here at PWL Red Deer over a couple of months, and together they came up with ‘Rustic Chili with Grand Marnier & Candied Oranges’.” Sundried tomato & jalapeno cornbread muffins were chosen as a side dish.

Care partners eager to help our team

“When word of the chili challenge spread throughout our community, a lot of employee care partners were eager to help our team out,” says Tracy. “Penny Hopkins (Lead Housekeeper) offered some traditional western tack equipment and hay bales to decorate the stand, and ended up bringing her goat Winter to the competition ‘for appeal’. Gordon Brake (Hospitality Aide) was on site bright and early to help with set up, ensuring everything was perfect for when the kitchen team arrived.”

July 19th, the day of the Cook Off was a hot one, but the team stayed cool in the shade of their canopy, although it does look a little crowded with that deer in there! Waskisew is mascot for the Canada Winter Games being hosted in Red Deer 2019.

Most original ingredients

“The judges seemed truly thrilled about everything,” reports Tracy. “At the end of the day, our team won the ‘most original ingredients’ category and marched home with a trophy and big smiles.”
